John Dimof

Board President

John has worked in the Umpqua Valley as a farmer, builder, teacher, and community organizer. Beyond the valley, he’s traveled to all four corners of the United States, teaching healthy lifestyle classes and building community programs. Combining his educational background in medicine, experience working in the nutrition field, and extensive training as an organization facilitator, he’s currently running non-profit organizations focused on health transformation and education. Certified in Plant-Based Nutrition from the T. Colin Campbell Center for Nutrition Studies and the PCRM (Physicians Committee for Responsible Medicine) Heart Healthy Nutrition Program, John regularly facilitates the Lifestyle & Nutrition Course. He enjoys sharing his passion to help others achieve success and find greater purpose in their lives. Beyond Food as Medicine Oregon, John works as the Thrive Umpqua Strategic Partnership Director, responsible for transforming over 60 organizations to incorporate health and well-being strategies. John is one of the founders of Food as Medicine Oregon and serves as an active Board President.

Jill Hansen, DVM, Board Secretary

Dr. Jill Hanson owned a veterinary clinic in Coos Bay for 40 years. She and her husband, a Douglas County firefighter, are now retired and live happily along the North Umpqua River. Due to her life-long love for animals, and the influence of her oldest son, who is a professor of chemistry/nutrition in Vienna, Austria, Dr. Jill Hanson made lifestyle and nutrition changes. She loves working as the Board Secretary, as the Roseburg Community Potluck Coordinator, and supporting participants in their journey toward better health.

Ramona Schultze, Board Treasurer

Ramona worked as a commercial chef for over three decades. After learning about lifestyle medicine and nutrition, Ramona not only experienced her own health transformation, but discovered a new world of culinary opportunity. Ramona serves as Board Treasurer and has been instrumental in providing wholesome and delicious food demonstrations and sampling throughout Food as Medicine Oregon programs.

Michael Sidrian, Trustee

Michael Sidrian is proud of his Lakota Sioux and Latino heritage and to be a member of the recovery community from drugs and alcohol. He recently celebrated 11 years of sobriety. Working on his own recovery, he found a passion for helping others, leading him to a career at ADAPT as a Drug and Alcohol Counselor CADC I. Early in his recovery journey, he turned to sugary and salty processed foods like cereal and fast food. When diagnosed with type II diabetes, in October of 2022, he was placed on medication. Coming from a long line of diabetics on both sides of his family, he thought this was “his time”, but still didn’t want to give up. Feeling determined, he started making adjustments to his diet, taking his fur babies for walks, and signed up for the Lifestyle & Nutrition Course. When learning that the Course could lead to disease reversal, he stuck it out and is so glad he did! In a short 5 months, he started seeing results in his health. Not only losing weight and having more energy, Michael reversed his diabetes, bringing his A1C from 11 to 5.3 and has been taken off all medications. Michael feels so thankful for Food as Medicine Oregon, for providing the education classes and events that encourage others just like him and to now contribute his wisdom and enthusiasm as a Board Member.

Kaila Luttrell, Trustee

Kaila grew up in Douglas County and began her health and nutrition journey more than 20 years ago. She has built a career across marketing, technology, and management roles while living in various communities across the country. Her work spans private education, fitness, and the arts, where she has developed practical leadership and organizational skills. A long-time volunteer, Kaila brings decades of volunteer experience ranging from youth cooking education to environmental stewardship. Having previously served on multiple boards, she now channels that organizational expertise directly into advancing the Food as Medicine Oregon mission in her home region.

Janice Bartholomew, Trustee

Janice Bartholomew brings a lifelong commitment to community service, education, and healthy living to Food as Medicine Oregon. She and her husband owned a small-town market for 14 years, giving her hands-on experience in business operations and community relationships; she led the American Cancer Society’s Relay For Life for over a decade and completed Oregon State University Extension’s Master Gardener and Master Food Preserver programs.

Janice joined the organization in 2019 as a student seeking better health while caring for aging parents, which inspired her passion for nutrition’s role in preventing and reversing chronic disease. She became a volunteer—co-facilitating support groups, teaching cooking and microgreen workshops, and founding Wednesday Walkers—and now serves on the Board, bringing the perspective of a participant and volunteer to help the organization expand its mission.

Jon Winders, Trustee

Jon, a Douglas County native, retired in 2022 after a career in health care administration. He oversaw a number of innovative projects throughout southwestern Oregon and was particularly interested in expanding access to care by focusing on new and alternative treatment programs. He and his wife, Cathy, adopted changes after twice attending the virtual Lifestyle and Nutrition course.
